My recipe for a great pork fried rice dish in Vietnamese style

Fried rice is a very popular dish in a Vietnamese's daily life. In Vietnam, the reason why families eat fried rice is kinda funny. It is the left-over rice from the previous meal that we use to make fried rice. Sometimes we don't want to waste that rice so instead of throwing it away, we turn it into fried rice. My recipe for a really delicious fried rice plate, specifically pork fried rice, is a little different. The secret comes in the spices I use in making the dish which are fish sauce and msg as well as how long the rice is fried on the pan. Notice if some people are allergic to msg, in that case you can use Knorr ( a kind of sweetening powder made from pork bones). You can follow my step-by-step guide as below.

Time to make: 15 minutes
Ingredients: - Cold rice
                    - Two eggs, preferably duck eggs.
                    - Pork
                    - Vietnamese pickled mustard greens
                    - Shallots, fish sauce, salt, msg or seasoning powder (Knorr), and black pepper.
               
Step 1 (PREPARATION):
- Take out left-over rice (cold rice) from the rice cooker. Use a spoon to kinda chop the rice into smaller pieces because cold rice tends to stick in big clusters.
- Slice 1 or 2 shallots into small slices (depending on how much rice you've got). I like to use lots of onions because it adds more flavor and better smell to my dish.
- Rinse the pork well. Cut the meat into thin slices.
- Rinse the pickled mustard greens with cold water. This is to lessen its sourness when stir-frying them.
Step 2 (EXECUTION):
- Put a little bit of cooking oil onto a pan under low cooking temperature. Wait around 10 seconds for the oil to warm up. Then put half of the sliced shallots into the pan and stir-fry them using a cooking spoon. The shallots should turn light yellow and smell good in around 15 seconds.
- Next, add vietnamese pickled mustard greens into the onion mixture. Stir-fry them for around 2 minutes. Then add pork. Add some salt, seasoning powder, and black pepper and stir them all together for another 1 minute. Once the vegetables become soft and the meat is cooked, put them into a bowl.
- Add a little bit of cooking oil in the same pan. Stir-fry the remaining shallots till they become yellow. Then put the cold rice in and fry it using a cooking spoon. Crack two eggs and stir them altogether with the rice. Add some fish sauce and seasoning powder. Make sure the seasonings and eggs are well mixed into the rice. Leave the rice linger on the pan for around 1 minute to make it crispier.
- Add the stir-fried meat and mustard greens into the fried rice. Mix them altogether for around 20 seconds. Add black pepper then turn off the heat.
 Step 3 (DISPLAY): Put the rice, vegetables, and pork mixture into a bowl and just EAT it :). Make sure you have a drink like a coke or orange juice or water - whatever you want - next to you so you don't get thirsty while eating this dry dish.
